Recipe: Veggie-Loaded Orzo and Sausage

This was probably the meal I was looking forward to the least of the three I picked during the week that featured this item. I figured I would be removing most of the pork sausage.
To my disbelief, I adored this this. The portions were huge (I had at least three full meals out of it)! I even had enough to share with my mom who commented that it was, “delish” (haha). The vegetables were crisp (but not raw), but not soggy. The orzo was satisfyingly soft. The pork sausage was succulent and sweet. Overall, the dish was savory and satisfying. It had me wanting more!
