Recipe: Pork and Noodle Soup Bowls

I used to be a huge soup connoisseur when I was younger, but have strayed from soup in recent years. Could this be the soup to get me out of my funk?
I would recommend prepping the fresh ingredients ahead of time. For example, I cut these in the morning before work in order to shorten my cook time after work since I knew I had a busy schedule that day.
The only complaint I have is that I always seem to get the weirdest shaped ginger, which makes it extremely hard to peel. Oh yeah, and maybe use gloves to cut the chili. I seem to always have leftover juices on my fingers after washing my hands and touch my face…haha!
The portion of this dish was more than enough! It made at least 4 meals for me (however, I did cook all of the noodles since I’m more of a noodle girl over extra broth). The meat was flavorful, plump, and juicy. The kale was slightly bitter and complimented the pork and broth well.
